Asparagus, Serrano Ham
& Gouda Cheese Quiche

This is a fantastic springtime quiche recipe that has a super easy prep time. You can find our recipe for pie dough and crusts in our Pie Cookbook, or use your own favorite crust recipe. MAKES 1 QUICHE (ca. 4-6 servings)

INGREDIENTS:

1 single pie crust, rolled out, unbaked
7 eggs
150 ml cream
2 Tablespoons Dijon mustard
1 teaspoon salt
150 g asparagus, chopped into 1-2cm pieces
50 g leeks (porrer), cleaned and sliced thin
75 g Serrano ham, about 5 slices, torn into pieces
100 g Gouda cheese (or your favorite cheese!)

Sprinkle of black pepper and dried thyme/timian (optional)
Beaten egg yolk & 2 tablespoons water to brush crust

HOW TO:

  1. Prepare a single pie crust. Place in freezer or fridge to keep cool.

  1. Preheat oven to 180 C. Circulated air (varmluft) is recommended.

  2. In a large mixing bowl, whisk together the eggs, cream, Dijon mustard and salt. Set aside.

  3. Fill the prepared chilled or frozen pie crust with the chopped asparagus, leeks, torn pieces of Serrano ham, and cheese.

  4. Pour the egg and cream mixture over the ingredients in the pie crust and sprinkle with a bit of freshly ground black pepper and dried thyme.

  5. In a small bowl, whisk an egg yolk and 2 tablespoons of water to create an egg wash. Brush the edges of the prepared crust with the egg wash for a beautiful golden brown finish on your crust, once it’s baked (this step is optional).

  6. Place the quiche on a baking tray and bake for 30 min, then turn the oven down to 160 C and continue to bake about 20-25 min or until the egg mixture is slightly puffy and firm in the center and the crust is deep golden brown. (This could take a bit longer in certain ovens, so keep an eye on it.)

  7. Remove from oven, allow to cool about 5-10 min, then serve warm and enjoy!

PIE SHOP TIP: You can freeze pre-baked quiches for baking at a later time. After you’ve completed Step 6, this is the time to freeze. Be gentle, so you don’t get egg spilling over in your freezer :-)

PIE SHOP TIP: Feel free to be creative on your quiche fillings – cherry tomatoes, cooked bacon, peppers, cheeses, mushrooms… all make great quiche fillings and you can follow the recipe as directed.
